Rice Krispies Treats


3 Tb. butter, melted or light olive oil (for dairy-free)

1 package large marshmallows (10 oz. or 40 large)

   or 4 c. mini marshmallows

1-2 drops Lemon, Lime, or Wild Orange Essential Oil

6 c. Rice Krispies Cereal

1 to 2 c. additional mini marshmallows (optional)


In a large bowl, combine the melted butter or olive oil with the marshmallow size of your choice. Stir well to coat the marshmallows with butter or oil. Place the bowl in the microwave and cook for 30 to 60 seconds, or until the marshmallows are melted. The butter and marshmallows will be a soft, fluffy mixture. Do not overcook. Do not cook on the stovetop, this will overcook.

Add 1-2 drops of your choice of Essential Oil to the marshmallow mixture, and stir again.

Lemon Oil = Lemon Merengue Flavor

Lime Oil = Key Lime Pie Flavor (top with graham cracker crumbs)

Wild Orange Oil = Creamsicle Flavor

Add the Rice Krispies cereal, and stir until mixed thoroughly.

Fold in the additional mini marshmallows (optional), if desired, for extra ooey-gooey yumminess! It will show little pieces of solid marshmallow for added texture and flavor. This is the added touch that sets my Rice Krispies Treats apart from others.  Many people request for me to make these little lovelies for parties and get-togethers. 

Place the Rice Krispies on a lightly greased cookie sheet or other pan. Cool. Cut into servings. Try unusal shapes, such as cookie cutter shapes.  Or make a Rice Krispies Cake, by forming it in a bowl, or circular pan, etc.
